LACTOSE-FREE CHEESE Their first cheese, created in 1943, was the famous Bleu Ermite, which is still a highly regarded product to this day. Since 2000, Bleu Bénédictin has also earned its reputation by winning several awards, including Grand Champion in 2000 and Category Champion in 2002 and 2006. BLEU BÉNÉDICTIN This semi-soft blue cheese is made from lactose-free pasteurized whole milk. It is matured on the surface and in the mass with penicillium roqueforti for more than 90 days. The Bleu Bénédictin, with a melting heart and a beautiful length in the mouth, has kept its natural pale gray rind which gives it its aroma of wild mushrooms.
